The Fumado boasts of a deep, complex smoky flavor and is versatile enough to be used in virtually any dish. It is made predominantly with Pimentón de La Vera, a protected designation origin (PDO) product from Extremadura in Western Spain. Right after harvest, the chili is dried with holm oak smoke for two weeks. This gives it a rich smoky taste. Bringing to mind the taste of barbecued meat, it is also made with red onions grown closed to Brussels, fresh habaneros, apple cider vinegar, organic garlic, brown sugar and a custom spice blend. Unlike chipotle, it is free from artificial flavors or additives of any kind.
